Frozen Yogurt Peach Pops
OK, lets get one things clear right now while there is still time: summer is not over yet. No really, it’s not because it can’t be. Why? I just got my first case of peaches and I’m making Frozen Yogurt Peach Pops with them. That’s why.

This my case of peaches, however, I’ve listened to a dozen or so people this week say such outrageous things as “Oh, I can’t believe summer is over already!” and “I don’t know why but this summer went by so fast!” and “Can you believe that summer is over?”

Shut up already. It is still mid-ish-August for crying out loud and the last part of summer, or any part with the peaches, is always the best part.

This doom-and-gloom end-of-summer rubbish talk around the office was likely brought about by the fact that we have just said goodbye to this year’s crop of summer interns. Interns, alas, must go back to school which also means that my fellow co-workers with kids have just either sent their kids back off to school or they are preparing to do so soon.

But say it with me “The end of summer vacation for school kids is NOT the end of summer for the rest of us.”

I know it can get confusing with back to school on the brain, especially when school seems to start back up earlier and earlier. And I just saw this morning at the Duane Reade that they have already put out a full aisle of Halloween candy and children’s costumes so I can somewhat understand such premature declarations of summer’s demise — but I can assure you all that this just isn’t so. It hasn’t happened yet. Truth is this time of year is actually the best part of summer and precisely for the same reasons you might think it is now over: the summer interns are gone and the kids are back in school.

It is now our time to enjoy the summer. And the peaches. And these delicious frozen  yogurt peach popsicles.

The weather actually gets better now or at least it feels like it. It could be my imagination but I think the weather does get better when there are less kids on the street, at the mall, and on the beach. And even if it the days are just now beginning to be discernably shorter than just a few weeks ago that means the evening light is more gorgeous. All the better to enjoy peaches by.

When there are peaches it must still be summer.

Every summer about this time my guy will come home one warm night from work holding a huge case of perfect, yellow, juicy summer peaches in his hands and then plops them on the counter with a big smile then say to me sweetly, “Here baby, make me something with these peaches. Please.”

Then the annual summer peach frenzy begins. Peach tarts, peach crisps, old fashioned peach ice cream and peaches in sangrias have been featured here before and are always a good bet for a good chunk of the case. Still each year I try to find a few new ways to use them. We’ve now brought peaches onto a full rotation in the dinner menu with our new favorite, Dorie’s Duck with Fresh Peaches. Still faced with several cresting their expiration date I decided to finally open the popsicle molds that had been sitting in the garage for two years, unopened.

Prep Time: 10 minutes

Cook Time: 4 hours

Yield: 10 Popsicles

Frozen Yogurt Peach Pops Popsicles

I really enjoy the mild tropical taste that the coconut brings these but they are equally good with almond milk or a mixture of half and half or even sour cream. Adjust the honey depending on your preferences and the ripeness of the peaches.

This is what you will need:

  • 3 cups ripe peaches, peeled, pitted, and roughly chopped
  • 1 Tbs, fresh squeezed lemon juice
  • 1/4 cup coconut milk (almond milk, half & half, etc.)
  • 1/2 cup plain Greek yogurt
  • 1 Tbs honey
  • 1/4 teaspoon vanilla, optional

This is how you make it:

  1. Reserve 1/4 cup of the chopped peaches. Place remaining peaches, lemon juice, milk, yogurt, and honey (and vanilla if you are using it) into a food processor or blender and puree until smooth.
  2. Return the reserved peach bits to the puree and mix in evenly with a spoon.
  3. Using a rubber spatula scrape mixture into a pouring glass or measuring cup for easy pouring.
  4. Pour mixture into popsicle molds leaving 1/2 inch at the top of the mold so that the popsicle can expand while freezing.
  5. Cover and add popsicle sticks.
  6. Place in freezer and freeze for at least 4 hours to overnight. To remove from molds just run warm water from the tap over the outside until they come loose. This usually takes no more than 20 seconds.

Notes

Follow the manufacturer instructions if you have one of the "instant popsicle makers that are now available.

  2. One of these would be great tonight. Ok, maybe two. Three’s my limit! I have yet to find a peach worthy of eating this summer so if you’ve found a stash it would be your culinary duty to share your supplier. There must be plenty of mouth-watering orbs of sweetness to go around, mustn’t there be? I’d be happy with one. Ok, maybe two. No limit.

    The ice is a great idea to serve them for a presentation.

    • Thank you Marilyn. Mouth watering orbs are not usually my thing. Give me a good pop to suck on any day though. You had trouble with peaches? These came from farmer’s market but dear husband’s second box came from Costco and they were as incredible.

That said, I am a heretic and prefer autumn to summer, but we are of one mind on an important point you bring up: EVERYTHING, weather included, is much more pleasant when there are fewer children around.

    • Well, I would bet that we could also agree on another thing. Autumn without kids is good too. Except for Halloween. When it comes to Halloween I think it is the adults that make it annoying.

My nieces and nephews were in town this weekend along with their gaggle of little people (five of them, from 10 months to 6 years) – I had the entire crew (17 people total) over for dinner and realized that I had no where near enough energy to round up so many young ones. I hid out in the kitchen with my 83 year old father and told my sister that she was in charge of child welfare. Problem solved.

    Fresh peaches in frozen form – absolutely…

    I want to make these pops when they have to go in the freezer and not outside. (okay I lied, it’s like Florida here but somewhere down south it’s cold enough I’m sure)

    • Thank you for your patience Maureen. I’m going to be a little while longer since I still have to fully appreciate fresh corn and plums. Maybe another pop variety or two. Then I’ll send summer your way after that. Promise.

  7. I’m with you about this end of summe r alk. Good grief, we still have lots of over 100 degree F. days ahead, of that I am certain. There fore, summer is far from over.

    Those Pops sound fab. I have never made frozen yogurt ones. Now you’ve got em going. Bravo!
